Khoya Stuffed Matar Ki Tikki

Full of flavors with sharper outside and sweet inside. Balance all the flavors with a tangy pea tikki stuffed with sweet khoya and date filled inside.

Ingredients
For the tikki:
·        1 1/2 tsp jeera
·        1 1/2 Tbsp desi ghee
·        2 tbsp ginger, chopped
·        1/4 tsp turmeric powder
·        1 tsp coriander powder
·        1 bowl de-shelled peas
·        3 tsp green chilies, chopped
·        2-3 Tbsp besan
·        1 pinch hing mixed with water
·        Salt

For the filling:
·        2 tsp green chilies, chopped
·        60-70 gms khoya
·        1 tsp coriander leaves, chopped
·        2-3 dates, chopped
·        3 tsp pista (heaped), chopped
·        Oil to pan grill / shallow fry the tikkis
Method:
1.     Firstly, in a pan add ghee, heeng water, ginger, green chillies and jeera. Heat it for 30 seconds.
2.     Now add peas, coriander, turmeric powder and salt. Sauté it till the peas turns brown a little from outside.
3.     After this, blend the coarsely in a mixer, then mix besan to it and make a firm mixture.
4.     Take a bowl and crumble the khioya and add chillies, coriander leaves, dates and pista and mix well.
5.     Take some pea mixture in your hand and stuffed it with the khoya filling.
6.     Now shallow fry these tikkis in a pan.

7.     Serve hot with tangy chutneys.
