Undhiyu: Indian Winter Mouth Drenching Recipes

Let's cook Undhiya:

Appreciate the flavors of authentic Gujarati vegetable dish. Fried winter vegetables and chickpea dumplings covered in spicy masalas. 
Ingredients
·        100 gms yam- peeled and diced
·        1/2 tsp asafoetida
·        100 gms beans- diced
·        100 gms raw banana- diced
·        1/2 tsp whole cumin
·        100 gms potato- peeled and diced
·        Oil to fry
For the muthiya:
·        1 tsp kastoori methi
·        2 cups chickpea flour
·        1 tsp sathri or lemon flower
·        2 tsp oil for binding
·        1 tsp red chilli
·        1 tsp sugar
·        1/2 tsp turmeric
·        1/4 tsp cumin
·        Salt
For the masala:
·        3 tsp coriander powder
·        1 Tbsp fresh coriander- chopped
·        1/2 tsp cumin
·        1 tsp red chilli powder
·        1 Tbsp grated coconut
·        1/2 tsp oil
·        1/2 tsp turmeric powder
·        Salt

Method:
1.     Fry all the vegetable lightly and keep it aside.
2.     For muthiya, mix all the ingredients in a bowl and make small -small balls from this mixture and fry it.
3.     For the masala, mix all the ingredients and keep it aside.
4.     Now heat the oil in a pan and add asafoetida and cumin and add the masala mixture and cook for few minutes.
5.     Now add muthiya balls and all the vegetables.
6.     Cook until it's done.

7.     Serve hot.
